Why the Vacuum Pump Is the Heart of a Freeze Dryer

Freeze drying, or lyophilization, removes water from a frozen product through sublimation. The process sounds simple, but every step depends on the vacuum system:

  1. Freezing — the product is frozen solid so its water content turns to ice crystals.
  2. Pressure reduction — the vacuum pump evacuates the chamber, dropping the pressure so ice can sublimate at low temperature. Most freeze drying recipes run at chamber pressures between roughly 10 Pa and 100 Pa, well inside the working range of a good industrial pump.
